From the Wintergreen Kitchen

You would think that we would be done with cookbooks by now, but no! We keep discovering and inventing new recipes. But times have changed. We find ourselves shifting towards a set of offerings that is increasingly plant-based. Along with perennial favourites from cookbooks past, there are nearly 50 new recipes collected here–all of which we have served at Wintergreen over the past couple of years.

So what’s new in this collection besides more vegan and vegetarian dishes? We’ve added more recipes to accommodate dietary preferences that are becoming increasingly common; gluten-free and non-dairy recipes are found throughout. We have also added many more offerings that include the wild food that now grows abundantly at Wintergreen. There is little doubt that edible plants have grown in the area for millennia. We hope that we are respecting the legacy of the Anishinaabe people who once lived here by paying close attention to the edible food that grows here, and by harvesting it carefully.

The collection here presents a tasty and nourishing cuisine that works for all appetites and needs. We hope you enjoy cooking the recipes as much as we enjoyed creating them. Cheers to good food and great company!
